Abstract:

Sushi is a Japanese dish composed mainly of fish that has become a favorite worldwide. Over the years, false advertisement of the fish contained in sushi has resulted in consumers spending their money on sushi that contains different fish then that it was advertised for. This mislabeling occurs from all parts of the food chain, from fish farm to processors and restaurants. Sushi restaurants most commonly replace expensive and scarce fish species with cheap fish and advertise it as the more expensive fish type. Specifically, the issue is most potent with red snapper, a rare type of fish that has declined due to overfishing.
