Abstract:

The aim of this project is to verify the authenticity of exotic meats sold in New York City’s butcheries by utilizing DNA barcoding to compare the DNA of the meat to existing reference barcodes for the species it claims to be. With the growing popularity of exotic meats in New York City’s multicultural food scene, consumers face uncertainty regarding the true identity of these products
