Abstract:

Our project is centered around misidentification and mislabeling of fresh and smoked salmon in local grocery stores, fish markets and restaurants by utilizing DNA barcoding. Furthermore, we will test each piece of salmon to identify if parasites such as such as Japanese broad tapeworms or bacteria plagued the samples.
